Bitter Melon Salad

冰鎮凉瓜蟹柳

Refreshingly crispy bitter melon and deliciously sweet with crab meat. This summery fresh bitter melon salad is both healthy and surprisingly appetizing.

Mrs. Yung will show you how to make bitter melon less bitter and deliciously crunchy. Yes, not bitter - bitter melon salad.

Ingredients:
140 g (14oz) Bitter Melon
4 Sticks of Imitation Crab Meat
5 ml Ice water
250 ml Ice cubes
2 tbsp Crushed peanuts

Dressing:
⅓ tsp Salt
3 tbsp Mayonnaise
1 tbsp Ketchup

Method:

  1. Half bitter melons and remove seeds. Cut bitter melon at a slight angle to create larger pieces.

  2. Quickly boil sliced bitter melon for 1 minute. Transfer melon slices into a bowl of cold water. 

  3. From cold water, transfer bitter melon into an ice bath. Let bathe for 30 minutes, remove and drip dry.

  4. In another bowl, mix bitter melon and dressing ingredients. 

  5. Loosen imitation crab meat into strings, place on top of bitter melon. Sprinkle crushed up peanuts and it’s ready to serve.

Note:

  • Transferring bitter melon into cold water prior to the ice bath is to help prevent it from melting the ice too quickly.

  • Soaking bitter melon in ice water gives them the crispiness after the quick simmer as well as to reduce the bitterness.

清脆爽口的苦瓜,配上蟹肉香甜可口。 這個夏日新鮮的苦瓜沙律既健康又令人驚訝的開胃。

材料:
凉瓜400克 (14安士)
蟹柳4條
冰水500 ml
冰粒250 ml
炒香花生碎2湯匙

汁料:
鹽1/3茶匙
沙律醬3湯匙
茄汁1湯匙

做法:

  1. 涼瓜切開邊,刮去瓤後切斜片。

  2. 將涼瓜片放入滾水灼1分鐘,取出放入凍水冲凍。

  3. 加入冰水及冰粒浸30分鐘,取出滴乾水份。

  4. 加鹽,沙律醬茄汁撈勻上碟。

  5. 蟹柳撕成幼條放上凉瓜面,洒入花生碎 即可供食。


註:

  • 凉瓜浸冰水會更爽脆。

  • 在冰浴之前將苦瓜轉移到冷水中有助於防止冰過快融化。
