Steamed Pumpkin Mochi

南瓜軟糍

 

A pumpkin shaped dessert that’s soft, stretchy and delicious. A fun to make at home and cute snack for the fall season and Halloween.

Ingredients:
250 g Pumpkin
140 g Sticky Rice Flour
40 g Glutinous Rice Flour
20 g Sugar
10 g Oil
250 g Red Bean Paste
10 Peanuts or Cashews

Method:

  1. 250 g of red bean paste divided into 10 pieces. Roll them into balls. Fridge red bean paste until ready for use at step 4 (for wrapping).

  2. Peel and slice pumpkins. Steam for 10 minutes and mash pumpkin with a heavy knife or in a large bowl with a fork until smooth consistency.

  3. Combine sugar, glutinous rice flour and sticky rice flour. Add mashed pumpkin and mix well. Add oil and knead dough. 

  4. Divide dough into 10 balls. Flatten dough balls around the sides with a rolling pin, leaving the middle part thicker. Thicker part is to prevent mochi from breaking when stretched. Add filling in the middle, wrap around and pinch the bottom to close. Use the back of a knife to gently draw lines from top to bottom to imitate the sectional look of pumpkin.

  5. Place pumpkin mochi on an oiled ceramic plate, steam in high heat for 8 minutes. Once steamed, insert 1 peanut or cashew at the top. May serve immediately.

南瓜軟糍

南瓜形狀的甜點,柔軟、有彈性、美味。 一個有趣秋季同萬聖節得意嘅小吃。

材料:
南瓜250克
糥米粉140克
粘米粉40克
糖20克
生油20克
紅豆茸250克
已炒花生或腰果10粒

做法:

  1. 紅豆茸分10份搓圓。

  2. 南瓜去皮切薄片排放碟上,隔水蒸10分鐘至腍取出,壓成南瓜茸放入大碗中。

  3. 將糖,糯米粉,粘米粉,加入南瓜茸內撈匀,最後加生油搓勻成1軟粉糰。

  4. 粉糰分10份,將每份按扁按扁包入紅豆茸.搓成圓形,在每個面上用小刀背,輕壓米字型,做成南瓜形狀。

  5. 排放已搽油碟中,大火膈水蒸8分鐘取出,在頂上挿入花生1粒,即成美味點心。
