Mango Mochi | Daifuku : Easy Microwave Version

芒果糯米糍 : 微波爐食譜

Simple 5 ingredients, easy microwave recipe. These mango-filled daifuku are super chewy, easy and simple to make at home. Microwave convenience mochi-licious, stretchy and chewy every bite. Fill them up with fruits or sweet paste of your choice!

Ingredients:
180 g glutinous rice flour
60 g sugar
350 ml milk
20 g oil

3 tbsp glutinous rice flour
(for working surface)

Filling:
2 mangoes
Or other fruits and sweet paste filling that you enjoy.

Method:

  1. Sift 3 tbsp of glutinous rice flour onto a plate. Microwave glutinous flour for 3 minutes. Set aside for later use. (This is to be used when kneading)

  2. Mix 180 g glutinous rice flour and sugar into a bowl. Slowly add milk (or water) into dry ingredients at separate intervals, while mixing to dissolve. Add oil and mix well. 

  3. In another bowl, sift mixture through a sieve to remove lumps. Pour mixture into a well oiled ceramic bowl. 

  4. Microwave mixture for 8 minutes. Take out and stir well. Set aside and let cool. 

  5. Cut mango into large pieces for filling. 

  6. Once the dough has cooled, sprinkle cooked glutinous rice flour onto the working surface. Knead dough, apply more cooked glutinous rice flour as needed. Cut dough into 12 smaller dough balls. Flatten dough ball around the sides with a rolling pin, leaving the middle part thicker. Thicker part is to prevent mochi from breaking when stretched. Add filling in the middle, wrap around and pinching the bottom to close.

Note:

  • The microwaved flour is to be used later to prevent dough from sticking on hands and surface.

  • Must use a ceramic bowl when microwaving mixture into dough. Dough will stick to other types of surfaces.

  • Kneading the dough helps make mochi chewier. 

  • Use water in replacement of milk.

NOTICE:
!Depending on your microwave. Microwave dough in intervals!
Microwave for 5 minutes, take out and stir well. Cook for another 3 minutes and stir well.

材料:
糯米粉180克
糖60克
鮮奶350ml
生油20克

糯米粉3湯匙
(做熟粉)


餡料:
芒果2只
或您喜歡的其他水果和餡料。

做法:

  1. 將3湯匙糯米粉,篩勻放平碟上,放入微波爐,叮3分鐘成熟粉。保存以備後用。(揉麵時要用糯孰粉)

  2. 糯米粉,糖放入深碗中,加鮮奶攪勻,至沒有粉粒,加入生油攪勻。

  3. 再用篩隔過,放入已搽油大碗中。

  4. 放入微波爐叮8分鐘,取岀攪勻。放在一邊冷卻。

  5. 芒果切大粒留用。

  6. 取叮熟粉糰切開12粒,沾上少許熟粉免沾手,將粉糰搓元按扁,包入芒果粒,做成糯米糍形,即可供食。

註:

  • 微波煮熟糯米粉,做手粉,免糯米漿沾手。

  • 必須使用陶瓷碗。麵團會粘在其他類型的表面上。

  • 揉麵團有助於使麵團更有嚼勁。

  • 可以用水代替牛奶 。

注意:
!取決於你的微波爐。不同時間的微爐麵團!

可以微波5分鐘,取出攪拌均勻。再煮 3 分鐘,攪拌均勻。
