Chinese Black Vinegar Salmon
老陳醋燴三文魚
A delicious and easy to make Chinese Black Vinegar Salmon Steak. This Chinese black vinegar, also known as mature or dark vinegar has a very unique smokey taste which goes really well with salmon. Tangy, sweet and smokey. A great combination with freshly thin sliced spring onions for texture and aroma in every bite.
Ingredients:
1 lb salmon steak
3 garlic clove, sliced
2 stalk green onion
Marinade:
½ tsp salt
1 tbs cooking wine
1 tsp cornstarch
Seasoning:
4 tbs mature vinegar
2 tbs honey
Method:
- Rinse and dry salmon steak. Add marinade ingredients and let marinate for about 10 minutes. 
- Medium high heat, add 1 tbs of oil. Add salmon steak and garlic slices and pan fry salmon until golden on both sides. 
- Add in combined seasoning ingredients. Cook with the lid on and bring to a boil. Garnish with spring onion and it’s ready to serve. 
Notes:
- Pan frying salmon does not need too much oil. Since salmon on it’s own already has enough fat.

材料:
三文魚扒1件約1磅
蒜肉3粒切片
蔥絲適量(約2條)
配料:
鹽半茶匙
酒1湯匙
生粉1茶匙
調味:
老陳醋4湯匙
蜜糖2湯匙
做法:
- 三文魚扒洗淨抹乾水,加醃料抹勻醃10分鐘。 
- 燒熱1湯匙油,放入三文魚扒蒜片,煎至兩面金黃色。 
- 加入調味料煮滾,伴上蔥絲即可上𥐙供食。 
豉油醬料:
將豉油汁料煮滾,即可配腸粉醬汁共食。
注:
- 煎三文魚不用太多油,因它自會出油。
