Steam 3 Eggs

三色蛋

Easy to make steam egg recipe that contains 3 types of eggs - salted duck eggs, chicken eggs and century eggs. A dish that contains 3 types of different flavour from the eggs.

Ingredients:

2 Century eggs
2 Salted duck eggs
3 Chicken eggs
½ cup of chicken broth
A dash of sesame oil
A dash of ground white pepper

Other:

A rectangular container for steaming
A sheet of plastic food wrap

Method:

  1. Separate salted egg yolks from the whites and set the whites aside. Dice up salted egg yolks and the century eggs.

  2. Combine and whisk together the salted egg whites, 3 chicken eggs and chicken broth along with a dash of sesame oil and ground white pepper. Add and mix in the diced up salted egg yolks and century eggs.  

  3. Inside of the container, brush a thin layer of oil and apply plastic wrap. Pour egg mixture in, and apply another plastic wrap.

  4. Steam over medium heat for 13 minutes, until solidified. Let cool and flip over to retrieve the eggs. Cut eggs into desired size and it’s ready to serve.

Note:

  1. By applying a sheet of plastic wrap over the eggs, it prevents undesirable holes caused by the condensation on the lid falling into the eggs.

  2. Use a toothpick or knife to detached the eggs from the sides of the container for easy retrieval.

材料:

皮蛋2只
咸蛋2只
雞蛋3只
上湯½杯
麻油胡椒粉各少許

工具:

保鮮紙2張6乘4長方盒1個
保鮮紙


做法:

  1. 將咸蛋黃,皮蛋切細件

  2. 雞蛋、咸蛋白加入上湯,麻油,胡椒粉拂勻 然後加入咸蛋黃,皮蛋撈勻

  3. 先舖上1張保鮮紙在長方盒內倒入蛋汁再加1張保鮮紙冚面

  4. 用中火隔水蒸13分鐘蒸至凝固,取出稍冷切約半吋厚件狀,排放上碟

註:

  1. 在蛋上蓋一層保鮮紙,可防止蒸氣的水份掉入蒸蛋中,做成不美觀的小洞。 

  2. 用牙籤或刀將蒸雞蛋和容器分開,方便取出。
