XO Sauce Chayote Pork Stir-Fry

XO醬合掌瓜炒肉片

A tasty and refreshing pork stir-fry. The natural sweetness and crispy chayote combined with XO sauce, gives this dish a tasty refreshing bite.

Ingredients:

12 oz chayote
6 oz learn pork
1 tbs XO sauce
2 garlic cloves
1 ginger slices
a few pieces of carrots

Marinade:

1 tbs water
2 tsp soy sauce
¼ tsp sugar
1 tsp of cornstarch
a dash of sesame oil
a dash of ground white pepper

Seasoning:

4 tbs water
⅓ tsp salt
¼ tsp sugar
½ tsp chicken bouillon
½ tsp cornstarch

Method:

  1. Wash, dry and slice pork. Marinate pork with marinade ingredients.

  2. Wash chayote, cut in halves, remove core and cut into slices.

  3. In medium high heat, use about 1 tbs of oil and stir-fry chayote for about 2 minutes. Remove and set aside.

  4. In medium high heat, use 2 tbs of oil. First sauté garlic and ginger slice to bring out the flavour. Add sliced pork, stir-fry, and add cooking wine to bring out the flavour. Reintroduce the chayote slices, add seasoning ingredients and stir well. Cover to cook for about 2 minutes. Finally add XO sauce and stir-fry, add carrots to finish. 

Note:

  • For a crisp finish, lightly stir-fry Chayote. When cooked for too long chayote will start to soften.

  • Chayote can be fried, stewed and also a welcoming ingredient in most Chinese soups.

  • These gourds can be stored for a long time. 

  • Commonly found in most Asian supermarkets in Toronto.

 

 

XO醬合掌瓜炒肉片

這是一款主要用佛手瓜和肉片烹調的小菜, 用上鮮味的肉片,加上清甜爽脆的佛手瓜,配合XO醬,使這道菜清爽鮮味。

材料:

合掌瓜12安士
瘦豬肉6安土
XO醬1湯匙
蒜肉2粒切片
薑2片
甘筍花數片

醃料:

水1湯匙
生抽2茶匙
糖1/4茶匙
生粉1茶匙
麻油胡椒粉各少許

汁料:

水4湯匙
鹽1/3茶匙
糖1/4茶匙
雞粉1/2茶匙
生粉半茶匙

做法:

  1. 豬肉洗浄切薄片 加醃料撈勻。

  2. 合掌瓜洗淨切開邊去核,連皮切萡片。

  3. 燒熱1湯匙油,放合掌瓜炒2分鐘取出。

  4. 加油2湯匙放𦍑,蒜片爆香,加肉片炒透賛酒,將合掌瓜回鑊,倒入調味料炒勻,加蓋煮2分鐘後,最後加XO醬,甘筍花炒勻,即可上碟供食。

註:

  • 合掌瓜可炒,炆及煲湯,並可存放長時間。
