Honey Ginger Ribs, Japanese Pickled Ginger (Gari)

Ever wonder how else to eat pickled ginger (gari). The pink or white ginger that comes with your sushi meal. This finger licking pork ribs that use these delicious sweet and sour gingers will definitely get you moving.

Ingredients:
1 lb pork ribs

Marinade:
¼ tsp salt
1 tsp light soy sauce
½ tbsp cooking wine
2 tsp cornstarch

Seasoning:
3 cloves garlic sliced
2 tsp Zhenjiang vinegar
1 tsp light soy sauce
1 tbsp ketchup
1 ¼ cup water
½ tsp chicken powder (bouillon)
⅓ cup pickled ginger
1 ½ tsp honey

Garnish:
Carrot for garnish
2 stalks spring onion

Method:

  1. Cut ribs into 2 inch long. Wash and drip dry. Mix well with marinade ingredients and let marinate for 15 minutes.

  2. Medium high heat, heat up 2 tbsp of oil. Quickly caramelize ribs on all sides. Push ribs aside and create an empty space in the middle, sauté garlic slices and add cooking wine.

  3. Pour in seasoning ingredients and let simmer with lid on in medium low heat for 20 minutes. Add in ginger slices and honey and cook for another 3 minutes to reduce sauce. Add spring onion and carrot slices, mix well before serving.

Note:

  • Pickled ginger used were Japanese pickled ginger (Gari). Easily found in most Asian supermarkets. Can also save these delicious ginger from your sushi order for later culinary use. 

  • What are Japanese pickled ginger (Gari). Gari is mainly served with your sushi meal. It either comes in a delicious pink or a pale white colour. Sweet, sour and a hint of ginger spiciness, Gari is perfect as a flavour enhancing ingredient.

有沒有想過如何吃醃姜。 壽司餐隨附的粉紅色或白色生薑。 用這些美味的醃薑製成的手指舔排骨絕對會讓你動容。

材料:
腩排1磅

醃料:
鹽1/4茶匙
生抽1茶匙
酒半湯匙
生粉2茶匙

調味:
蒜肉3粒切片
鎮江醋2茶匙
生抽1茶匙
茄汁1湯匙
水1 1/4杯
鷄粉半茶匙
酸薑片1/3杯
蜜糖1 1/2湯匙

裝飾:
甘筍花數片
蔥2條切段

做法:

  1. 排骨切約2吋長條狀,洗浄滴乾水份,如入䤑料醃15分鐘。

  2. 燒熱2湯匙油,放入排骨煎至微黃色,在鑊中心加蒜片爆香賛酒。

  3. 倒入調味料煮滾加蓋,中慢火炆20分鐘後,加入酸薑片,蜜糖煮多3分鐘,放入蔥段,甘筍花兜勻,即可上碟。
